We aim to address global nutritional deficiencies, such as anemia (iron deficiency) and osteoporosis (calcium and vitamin D deficiency). These deficiencies disproportionately affect certain groups, including pregnant women, the elderly and children. Current approaches – dietary supplements and conventional food fortification – often struggle with challenges such as poor nutrient absorption, loss of stability during storage, and undesirable effects on taste and texture.

We have developed casein-stabilized nanocapsules and emulsions for encapsulation of hydrophilic and lipophilic nutrients, respectively, with the aim of protecting them in the food matrix and through digestion, and ensuring efficient absorption in the gut. Within the framework of this project, we will conduct a pilot study at kitchen scale to evaluate the scalability and effectiveness of the technology in real food environments.
